Matcha bowl and bamboo whisk for preparing ceremonial matcha

Ceremonial vs Culinary Matcha: What's the Difference?

Shop for matcha and you'll quickly see two labels: ceremonial and culinary. Here's what they mean and which one you actually need.

The short answer

  • Ceremonial matcha is for drinking on its own, whisked with water.
  • Culinary matcha is for lattes, smoothies and baking, where milk or other ingredients balance its stronger flavour.

It's worth knowing that these are trade terms rather than an official grading system, so quality varies between brands. Colour, smell and origin are better guides than the label alone.

Ceremonial matcha

Ceremonial matcha is typically made from the youngest, most tender tea leaves, which are shaded before harvest and stone-ground into a very fine powder. It tends to be:

  • Vibrant green in colour
  • Smooth and naturally sweet, with a rich, savoury (umami) note and little bitterness
  • More expensive

Use it for traditional matcha whisked with water, where you'll really taste the difference.

Culinary matcha

Culinary matcha usually comes from slightly older leaves or later harvests. It tends to be:

  • A duller, more olive green
  • Stronger and more astringent, which helps it stand up to milk and sugar
  • Better value, so you can use more of it

It's ideal for lattes, iced matcha, smoothies, cakes and cookies.

Which should you buy?

  • Drinking it straight? Choose ceremonial.
  • Mostly lattes? A good culinary or "latte grade" matcha is fine and better value.
  • Baking? Culinary.
  • Buying a gift? Ceremonial feels more special and pairs perfectly with a matcha set.

What to look for

  • A bright, fresh green colour (brown or yellow tones suggest older or lower-quality powder)
  • A Japanese origin, such as Uji, Nishio or Kagoshima
  • Small, airtight packaging, as matcha loses freshness once opened. Store it sealed in a cool, dark place.

You'll need the right tools either way

Whichever grade you choose, sifting and whisking make the biggest difference to taste and texture. Our Matcha Ceremony Gift Set includes a bowl, bamboo whisk, holder, sieve, scoop and spoon. Then follow our step-by-step guide or try an iced matcha latte.
